Kimchi Buchimgae is one of my favorite Korean snacks ever! My mom used to make these on rainy days or when it was cold out. It is incredibly easy to fix but tastes wonderful. If you have homemade kimchi, wait until it is about 2 weeks old so that it's texture would be nice and soft when it is cooked. You can add other vegetables if you want to, like zucchini or bell peppers but I like mine plain with some kimchi and chili peppers.
Kimchi Buchimgae
Ingredients:
1 cup kimchi, chopped
1 cup flour or Korean buchimgae flour (You can find it at oriental stores)
1 cup water (You may add less water for a thicker texture. I like light texture with more water but you can add about 2/3 cup water.)
1/4 cup kimchi juice (the juice from the kimchi container)
1 serano chili pepper, sliced (you can seed it or use the seeds for spicier buchimgae)
1/4 teaspoon salt
Directions:
In a large bowl, combine kimchi, flour, water, kimchi juice, chili pepper, and salt and mix well with a spoon, until the flour is not lumpy.
Heat oil (about 1 tablespoon) on a flat pan over medium-high heat, add about 1/2 cup full mixture on to the pan and cook about 1-2 minutes on each side or until the pancakes are reddish brown.
Serve with soy sauce if desired.

ReplyDeleteOh Bob, you should definitely try Kimchi sometime. I know many people are afraid of trying it because it is way different from what they're used to but many find it fresh and delicious. :) I like freshly made kimchi. I never liked the ones that had been buried for a long time during winter. :)

I have a big old jar of the Napa/turnip in my fridge right now, with floaty flecks of red pepper coloring the lovely marinade.
I thank you for your comment on Lawn Tea; the roast itself was wonderful---we had it as pulled pork sandwiches Sunday night, then at noon today, I sliced enough neat slices to cover the bottom of a baking pan, layered on sliced onion, small-cut cubes of potato, and several cups of shredded cabbage.
I poured on some chicken stock with a little garlic, soy sauce, and a bit of cornstarch to thicken as it bakes, and it's perfuming the whole downstairs.

ReplyDeleteI just recently tried kimchi pancakes and was immediately taken by them! I didn't realize how easy they are to make, so I will definitely have to try making them one day. But, I'm unsure of what kind of kimchi to buy since I've only had it in restaurants. Can you recommend a good brand? We have tons of 99 Ranch Markets nearby!

My aunt who lives in Seoul promised to send me a kimchi recipe as she claims it's a lot better than a bottled one. Unfortunately I have not received the Kimchi recipe yet haha... My family loves kimchi. I do have buy the bottled one though... it's a staple in my fridge... love the idea of kimchi pancake!
