Healthy Catfish Taco

I love fish. It's shame that fish are a little pricey around here... Whenever I go to Costco, I look out for cheaper fish that still tastes good. Catfish is that. I got lots of catfish for $12. I thought catfish was perfect for fish tacos. It's got a great texture, too. It's incredibly easy to fix it and really healthy too. And the fresh salsa is always the best in any tacos!

Catfish Taco

Ingredients:

1 tablespoon olive oil
3 catfish fillet
2-3 teaspoons taco seasoning
1/2 teaspoon garlic powder or garlic seasoning
Salt and pepper to taste
Tortillas
Mexican cheese

Fresh chunky salsa:
1 tomato, seeded and diced
1 garlic clove, chopped
1/4 cup fresh cilantro, chopped
1 teaspoon lemon or lime juice
1/8 teaspoon salt

Directions:

In a large skillet, heat oil over medium high heat. Add the catfish and cook until the fish is easily breakable, about 5 minutes. Break the fish into small or big chunks with a spatula and add the taco seasoning, garlic powder, salt and pepper and stir well. Remove from heat when the fish is well seasoned and cooked through.

Make salsa by combining all salsa ingredients in a medium bowl and mix well.

Place a good portion of the fish on a tortilla, then salsa, and a little bit of cheese on top. Grill the tortilla (optional) and serve.
