Fabulous Aebleskivers (Danish Pancakes)
This Aebleskivers are one of my favorites! My father-in-law makes great breakfast pastries including these great Danish pancakes. He uses his buttermilk pancakes recipe for this - so you may use this recipe for regular pancakes!! Eat it when it's still warm!
Aebleskivers (Danish Pancakes)
Ingredients: (Makes about 12-15 aebleskivers)
1 egg
1 cup buttermilk
2 tablespoons canola oil
1 teaspoon vanilla extract (For an authentic taste, you may use 1/2 teaspoon cardamon and lemon zest from half of a small lemon)
1 cup all purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Direction:
In a large bowl, beat egg, add remaining ingredients in order listed and beat with rotary beater until smooth.
Grease heated aebleskiver pan with oil (Use vegetable oil, rather than a little spray of pam - if you prefer pam, you may need to spray for several seconds in each hole.)
Fill in each hole 3/4 of the way. On low/medium heat, cook until the edges are stiff enough to create a solid dome. Turn them over using a skewer or a thin chopstick and cook until golden brown, about 1-2 more minutes. Make sure the inside is done, not wet.
Enjoy with your favorite jam, syrup, or powder sugar.
