Easy Chicken Casedilla
This is what I usually make when I want to fix a quick meal for dinner. It's easy and simple and most importantly, tasty! I used chicken but you may use beef steak. We used wheat tortilla for the first time for this dish, and LOVED it! But you can use flour tortilla, of course. My husband made some avocado dip with a little bit of garlic and cilantro and it made a great topping for the casedilla.
Chicken Casedilla
Ingredients: (makes 4 servings)
4 wheat tortillas
3 chicken breasts, cut in thin strips
1 red bell pepper or green bell pepper
5-7 brown mushrooms, sliced
1 clove garlic, minced
seasoning salt, pepper, salt
Mexican cheese, grated
Direction:
Season chicken breasts with seasoning salt - to cover the chicken. In a large saute pan, heat oil over medium-high heat, add garlic and seasoned chicken. Cook until the chicken is cooked thoroughly, stirring frequently. Add red bell pepper, brown mushrooms, a pinch of salt and pepper.
On a flat pan, heat 1 tablespoon oil on medium heat. Grill tortilla both sides. Then on half, place cheese, chicken, and more cheese in that order. Fold the tortilla over the top, covering your filling. Make three more the same way.
Serve with salsa or avocado. Enjoy!
