Jalapeno Tuna Melt

I had never had tuna melt until I tried this one. I wasn't so sure how tuna would taste with melted cheese. To my surprise, it was amazing! I actually enjoyed the combination of cold tuna mix with warm melted cheese. I don't use too much mayo in tuna mixes. Sometimes, I replace mayo with 1-2 tablespoons Caesar salad dressing or use low fat mayo which has significantly less amount of fat. The highlight of this sandwich was the picked jalapenos. It was one of the best tuna sandwiches I've ever had!

Jalapeno Tuna Melt

Ingredients:
Makes 2-3 sandwiches

1 canned tuna in water
1 celery stalk, finely chopped
1 tablespoon pickled Jalapeno, finely chopped
1 tablespoon finely chopped purple onion
2 tablespoons low fat mayo
Freshly ground black pepper to taste
2-3 sandwich rolls or sandwich thins
Nonfat butter spray (*I can't believe it's butter)
1/4 cup shredded cheddar cheese or 1 slice of cheddar cheese for each sandwich

Directions:

In a medium sized bowl, combine the tuna, celery stalk, pickled Jalapeno, onion, mayo, and black pepper and mix well with a fork.

Spray the white part of the buns with a butter spray and grill the white sides on a flat pan. When the rolls are toasted to your liking, place 1/4 cup of cheddar cheese on top of a bottom roll and let stand on the pan until the cheese starts to melt. (I like to put the top roll on top of the cheese so the cheese melts faster.)

Top the roll with about 1/2 cup full of tuna mix and enjoy!

Low Calorie Tuna Sandwich

Are you on a diet? I am. In the beginning of last year, I decided that I needed to lose all the baby weight. And I did. But I am still about 20 lbs overweight. I have been exercising regularly for about a year and a half now and I thought I was eating pretty healthy but I'm having a hard time losing weight after I lost about 20 lbs last year. So now I'm counting calories. I'm allowed about 1400 calories per day. Counting calories isn't so hard. I have a calorie counting software, called "CalorieKing" and it's been fun tracking what I eat during the day. I'm more aware of what I eat and how much I eat. I drink a lot more water. And I exercise regularly. I couldn't run 5 minutes before but now I can run up to 30 minutes straight. That is an accomplishment for me. :) The reason why I am writing this is so that I can keep myself motivated to continue on with my weight loss journey. I am replacing white flour with whole wheat. I am eating two snacks in between meals so my metabolism is up. I have already lost 3 lbs in the last three days by counting calories and exercising at the gym. When I go to a restaurat, I ask for calorie charts (most restaurants have them) and skip the bread and salad dressing. It is a great change for me. And for my husband, too. He's lost about 50 lbs last year and he's still losing a lot. I'm so proud of him.

Okay, so you'll be seeing some lower calorie recipes on this blog for a while. But don't expect to see no fat recipes because that's not going to happen in my family. You need good fat to keep yourself energized. :)

This tuna sandwich is great for lunch. It's got about 240 calories per serving. It's also very tasty. I used a ceasar salad dressing, not mayo. Ceasar salad dressing probably has more calories than low-fat mayo or maybe even real mayo, but it tastes delicious, too. I recently fell in love with SandwichThins and they are great for any kind of sandwiches.


My Favorite Tuna Sandwich

2 sweet pickles, chopped
1/2 celery stalk, chopped
1 tablespoon garlic Ceasar salad dressing
salt and black pepper to taste
Sandwich Thins


Directions:

In a bowl, combine the tuna, sweet pickles, celery, Ceasar salad dressing, salt and pepper. Spread 1/2 of the tuna mix on a Sandwich thin and enjoy!

Zucchini Pancakes

I have been trying to fix an actual lunch everyday and these zucchini pancakes work perfect for me. It's easy to fix and also so delicious! It is also pretty healthy. Instead of using oil or butter, I use Pam, the cooking spray. However, you can always substitute it with real butter or olive oil to cook the batter. There is only about 4 tablespoons of flour, so the pancakes are not really flour based, more like zucchini based, I should say. They taste wonderful, too. I am addicted to them now. I made these twice for lunch last week. :) I chopped my zucchini and onions fine but you may grate them for a smoother texture. I personally like a chewy and chunky texture.

Zucchini Pancakes 
Makes 2-4 pancakes (depending on the size and the thickness)

Adapted and changed from Food Network

Ingredients:

1 medium zucchini, diced small
1 tablespoon chopped red onion
1 egg, lightly beaten
3-4 tablespoons flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Cooking spray or butter or olive oil


Directions:

In a medium bowl, combine all the ingredients except cooking spray/butter/olive oil, and mix well with a spoon or a whisk.

Spray a large flat pan or a saute pan with cooking spray (or butter or olive oil) and heat over medium heat. When the pan is hot, drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned.

Serve hot. Enjoy!!

Cheesy Casedilla w/ Cilantro and Green Onions

This is a very simple way to prepare a quick lunch. I love the flavors of cilantro and green onions, especially with cheese. The grilled tortillas smell so great, too. My little boy loves it, too! So that's always a plus. Sometimes, I don't really feel like cooking something up for lunch but this one is quick and simple enough for me to make.

Cheesy Casedilla w/ Cilantro and Green Onions

Ingredients:
for 1-2 servings

2 flour tortillas
1/2 cup Mexican cheese or cheddar cheese
1/4 cup fresh cilantro leaves, chopped in big chunks
1/2 green onion, chopped
Cooking spray or butter

Directions:

Spray a flat pan with a cooking spray or butter it and heat over medium heat. Place one tortilla on the pan and spread the cheese on the tortilla. Then add the cilantro leaves and green onions. Place the second tortilla on top of the cheese and wait until the cheese starts to melt. Carefully, flip the tortillas to grill the top tortilla. Grill until both sides of the tortillas turn golden brown. Cut into 4 pieces and enjoy!!
