Healthy Wednesdays: Asparagus and Cashew Nuts w/ Apple Cider Syrup



These asparagus and cashew nuts, lightly flavored with apple cider syrup was such a great side dish one night. Who would've thought asparagus and cashews would go so great together? The cashews were roasted perfectly - they were crispy and sweet because of the syrup. If you're looking for a flavorful side dish, try this. It goes well with about anything.



Asparagus and Cashew Nuts w/ Apple Cider Syrup

Ingredients:

1 bunch asparagus, stem ends removed
1/2 - 1 cup cashew nuts
salt and pepper to taste
Apple Cider Syrup (Recipe follows)

Directions:

Heat oven to 400 degrees.

On a baking sheet, spread the asparagus and season it with salt and pepper. Place the cashew nuts over the asparagus. Drizzle 1-2 tablespoons apple cider syrup over the asparagus and cashew nuts.

Bake for 10-12 minutes, or until the asparagus is softened, but not too softened.

Apple Cider Syrup-

2 tablespoons butter, melted
1/2 cup corn syrup
3/4 cup apple cider
1/2 cup brown sugar
1/2 teaspoon lemon juice
Cinnamon and nutmeg to taste

Combine all ingredients in a pot. Bring to boil and let simmer 15-20 minutes. Serve hot.

Note: I know you might feel like you're wasting your time making this syrup because you will only need 1-2 tablespoons for the asparagus recipe. But why not make whole bunch? These apple cider syrup is very good with pumpkin pancakes! (And I'm sure it will be good with any kinds of pancakes and waffles!) I made a  bunch the other day to store in the fridge, too. So go ahead and double the recipe if you have a big family. I've already promised my in-laws that I will make some pumpkin pancakes on Thanksgiving morning. I'll have to triple the recipe. :)
