Crunchy Garlic Chicken



I had never used cornflakes cereal to make crispy chicken so when I saw this recipe, I was really curious how it was going to turn out. I actually enjoyed it very much. The flavor of the chicken was also very unique, but in a good way. The combination of the flavors of cornflakes and garlic was quite extraordinary.



Crunchy Garlic Chicken
Slightly changed from "Betty Crocker's Cookbook"

Ingredients:

2 tablespoons butter, melted
2 tablespoons milk
1 tablespoon chopped fresh chives or parsley
1/2 taspoon salt
2 gloves garlic, minced (the original recipe calls for 1/2 teaspoon garlic powder, however, my family prefers fresh garlic, it is our favorite ingredient!)
2 cups cornflakes cereal, crushed (1 cup)
3 tablespoons chopped fresh parsley
1/2 teaspoon paprika
6 boneless, sinless chicken breast halves (1 3/4 lbs) (or use 2-3 chicken breasts and cut them in half)
2 tablespoons butter, melted

Directions:

Heat oven to 425 degrees F. Grease retangular pan, 13 X 9 X 2 inches.

Mix 2 tablespoons butter, the milk, chives (or parsley), salt and garlic (or garlic powder). Mix cornflakes, parsley and paprika. Dip chicken into milk mixture, then coat lightly and evenly with cornflakes mixture. Place in pan. Drizzle with 2 tablespoons butter.

Bake uncovered 20-25 minutes or until chicken is no longer pink when center of thickest pieces are cut.

  4. Looks great, I love the crispiness of the cornflakes. I used to have this once a week at my old work at the cafe with a honey mustard sauce. The couple that owns it are Korean and they cooked a lot of Korean dishes.

  8. I love chicken and adding an extra layer to it gives it such a tasty twist--I need to try the cornflake coating..I usually use panko, but cornflakes would be neat.
