Perfect Vegi Medley

If you're looking for a healthy vegetable side dish, this will do. The yukon gold potatoes, zucchinis, red and yellow bell peppers, and some garlic are all you need. Of course, you can make a little change and use your own favorite vegi's.

Vegi Medley

Ingredients:

1 tablespoon olive oil
6 yukon gold potatoes
2 zucchinis, sliced
1/2 red bell pepper, cored and seeded, cut in strips
1/2 yellow bell pepper, cored and seeded, cut in strips
2 garlic cloves, chopped
salt and pepper to taste

Direction:

Preheat oven at 400 F. In a square baking pan, place zucchinis, red and yellow bell peppers, garlic cloves, salt and pepper. Drizzle olive oil over the vegetables. Bake it in the oven until the vegetables are softer, about 15 minutes.

Meanwhile, boil about a gallon of water in a large pot. Add potatoes and pinch of salt and cook until the potatoes are cooked, about 12-15 minutes.

Grill the cooked potatoes on a oiled pan, if desired. Serve the potatoes with the rest of the vegetables.
