Warm Carmelized Red Potatoes



Looking for a perfect side dish? Try this one. Balsamic vinegar is a wonderful flavor booster! You can use red wine vinegar or cider if you don't have any on hand.

Warm Carmelized Red Potatoes

Ingredients:
10 small red potatoes cut into 1-inch pieces
1/2 teaspoon salt
1/3 cup butter or margarine
1/4 cup balsamic vinegar
1/4 cup packed brown sugar
1/4 teaspoon salt
Freshly ground pepper, if desired

Direction:

Heat 1 inch water to boiling in 3-quart saucepan. Add potatoes and 1/2 teaspoon salt. Heat to boiling; reduce heat to medium. Cover and cook about 12 minutes or until tender.

When the potatoes are tender, add butter, balsamic vinegar, brown sugar, salt, and pepper, stirring occasionally. Reduce heat to simmer until the sauce thickens.
