Zucchini Pancakes

I have been trying to fix an actual lunch everyday and these zucchini pancakes work perfect for me. It's easy to fix and also so delicious! It is also pretty healthy. Instead of using oil or butter, I use Pam, the cooking spray. However, you can always substitute it with real butter or olive oil to cook the batter. There is only about 4 tablespoons of flour, so the pancakes are not really flour based, more like zucchini based, I should say. They taste wonderful, too. I am addicted to them now. I made these twice for lunch last week. :) I chopped my zucchini and onions fine but you may grate them for a smoother texture. I personally like a chewy and chunky texture.

Zucchini Pancakes 
Makes 2-4 pancakes (depending on the size and the thickness)

Adapted and changed from Food Network

Ingredients:

1 medium zucchini, diced small
1 tablespoon chopped red onion
1 egg, lightly beaten
3-4 tablespoons flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Cooking spray or butter or olive oil


Directions:

In a medium bowl, combine all the ingredients except cooking spray/butter/olive oil, and mix well with a spoon or a whisk.

Spray a large flat pan or a saute pan with cooking spray (or butter or olive oil) and heat over medium heat. When the pan is hot, drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned.

Serve hot. Enjoy!!

  3. I love the way yours look. The one time I tried to make zucchini pancakes, they were kinda floppy and the texture was gummy-ish. (yes, that's a very technical term!) These look better. Might have to try them!

  24. I have been hungering for the little zucchini fritters I haven't made for years, and they are really just smaller versions of your beautiful pancakes!I am drooling here! My main difference is that I add some cooked rice and quite a lot of garlic!!!!!

  41. Mm, I love the black pepper to flavor it. I'd also probably want a bit of hot sauce on the side - the Asian variety, with red chili flavors. Don't know how to describe it...yum!

    You know, I cook also zucchini like a condiment for pasta..very simple recipe, but so yummy! if you like pasta and you don't know the recipe "pasta with zucchini", I will be glad to share with you my recipe. There is also another alternative "pasta with zucchini and shrimps"...so tasty

  62. I always use cooking spray in place of the butter and oil as well. These look really different, but good! You could probably use carrots or yellow summer squash as well. And the topping options are endless!
