Zucchini Pancakes
Makes 2-4 pancakes (depending on the size and the thickness)Adapted and changed from Food Network
Ingredients:
1 medium zucchini, diced small
1 tablespoon chopped red onion
1 egg, lightly beaten
3-4 tablespoons flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Cooking spray or butter or olive oil
Directions:
In a medium bowl, combine all the ingredients except cooking spray/butter/olive oil, and mix well with a spoon or a whisk.
Spray a large flat pan or a saute pan with cooking spray (or butter or olive oil) and heat over medium heat. When the pan is hot, drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned.
Serve hot. Enjoy!!
These would work perfectly for a healthy lunch. I agree, I would like mine with a chunkier texture as well.
