Curried Yellow Split Pea Soup
Ingredients:
2 tablespoons butter
1 tablespoon chopped garlic (add chopped onions if you want)
1 lb yellow split peas, rinsed
5 cups low sodium vegetable broth
1-2 tablespoons curry powder (I used 2 tbsp but you can use just 1 tbsp)
Kosher salt and freshly ground black pepper
Directions:
Place the butter in a large saucepan over medium high heat. When the butter starts to melt, add the garlic (and onions) and stir frequently until the garlic starts to brown (or the onions are translucent), about 2-3 minutes (if using onions, about 5-6 minutes).
Add the split peas and the curry powder to the pan and stir well with the garlic (and onions). Add the vegetable broth and bring it to a boil. Reduce heat to low, cover and cook at a simmer until the peas are tender and no longer hold their shape, about 45-60 minutes (or even longer). Taste and adjust seasoning (salt and pepper) according to your liking.
Serve warm.
My mother made the most lovely soup from green split peas and ham. I remember my father being so happy when she made it. We ate it with corn bread. She froze leftovers for future meals.
ReplyDeleteLentils, chickpeas (also called garbanzo beans) are excellent. Interesting that I also have a husband who can not tolerate being in the same building with an onion. Hard to make soup without an onion. I sneak them in, but you seem like a nicer person than I am.

ReplyDeletei have yet to try split pea soup too! that's great that you got creative with the ingredients. i never would've thought to put curry in this soup. (and it's too bad your husband abhores onions. that is so strange! onions are in practically EVERYTHING!) lol.

ReplyDeleteAt many restaurants, he asks "no onions" but then he takes a bite of a burrito, for example, and frowns like he has eaten something rotting or something, and sure enough, there are finely chopped onions. He tastes it no matter how finely onions are chopped. One time, I brought some split pea curry home from a cooking group which had onions which were absolutely invisible so I wanted to do a little experiment and asked him to taste it saying it's so good. And after having a bite, he almost puked. So yeah, I can't "trick" him at all. It doesn't work. People think he'll eat onions if I "hide" it somehow in soups but no, he tastes it immediately and pukes. It's sad but what can I do. I married him knowing he doesn't eat onions... :) It's okay, though. I am used to it. When we go out to eat, I get to order things with a lot of onions, like onion rings! :)

I love,love,love curry powder. I actually just tried it for the first time a few months ago-what a great addition to dishes! I don't think I could survive if I had a husband who hated onions :-(
ReplyDeleteI agree what a beautiful sounding and looking soup. My dad is an onion hater too, but only the texture bothers him, so my mom can use onion powder to flavor their foods. Sounds like your hubby hates the flavor...
