Dak Bulgogi 닭불고기

Have you ever visited Kevin's "Closet Cooking" blog? It is fabulous, definitely one of my favorite food blogs to visit. Despite of my love for this blog, I had never tried his recipes. I always bookmark his recipes but never had a chance to try them out. But when I saw this recipe, I immediately checked if I had all the ingredients for it and I knew that I just had to try it. This is a fabulous Korean recipe that I loved to eat back in Korea. I was craving some Korean food and this completely satisfied my craving. It is a little spicy but also sweet at the same time. It was wonderful with white rice and lettuce.

*Changes I made: I used a fuji apple instead of Asian pear. But I know Asian pear works wonderfully in Korean bbq. But I just didn't have it on hand. But apples work great as well.

*Gochujang is red pepper paste that Koreans eat almost everyday. It's spicy and sweet at the same time. You should be able to get it at any oriental stores.

Cheesy Casedilla w/ Cilantro and Green Onions

This is a very simple way to prepare a quick lunch. I love the flavors of cilantro and green onions, especially with cheese. The grilled tortillas smell so great, too. My little boy loves it, too! So that's always a plus. Sometimes, I don't really feel like cooking something up for lunch but this one is quick and simple enough for me to make.

Cheesy Casedilla w/ Cilantro and Green Onions

Ingredients:
for 1-2 servings

2 flour tortillas
1/2 cup Mexican cheese or cheddar cheese
1/4 cup fresh cilantro leaves, chopped in big chunks
1/2 green onion, chopped
Cooking spray or butter

Directions:

Spray a flat pan with a cooking spray or butter it and heat over medium heat. Place one tortilla on the pan and spread the cheese on the tortilla. Then add the cilantro leaves and green onions. Place the second tortilla on top of the cheese and wait until the cheese starts to melt. Carefully, flip the tortillas to grill the top tortilla. Grill until both sides of the tortillas turn golden brown. Cut into 4 pieces and enjoy!!

Roasted Chickpeas with Rosemary and Awards

Fixing lunch is actually really hard for me to do. If you're a stay-at-home mother with one or two kids, you probably understand this.. I just don't feel like cooking much for lunch. I either eat leftovers from dinner or just snack or eat whatever my boy is eating, like pudding or yogurt or peanut butter sandwich... But a couple of weeks ago, I decided to make something for lunch. Something nutritious and healthy for my body. I've been doing this for about 2 weeks now and I feel great. I feel energetic! I exercise twice a day now, too. It's been fun. These roasted chickpeas are a great source of protein. They satisfy your hunger and boost your metabolism, too. The crunchiness of the chickpeas was my favorite about this dish.

Roasted Chickpeas with Rosemary

Makes about 1 cup

Ingredients:

1 (15oz) can chickpeas or garbanzos
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 tablespoon chopped fresh rosemary leaver or 1/2 teaspoon dried rosemary leaves
1/8 teaspoon paprika
1 teaspoon garlic powder
1 tablespoon Parmesan cheese, grated

Directions:

Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil. Rinse the beans in a colander and drain. Gently rub th bans to loosen the skins. Discard the skins. Pat the beans dry with a towel and place in a bowl.

Add the oil, salt, pepper, paprika, and garlic powder and toss to coat the beans evenly.

Spread the beans in an even layer on the baking sheet and bake for 30 minutes, until the beans are crunchy, stirring and shaking the pan midway through.

Sprinkle the rosemary and bake another 8-10 minutes. Sprinkle the cheese and serve.

Chocolate Chocolate Chip Cookies

Oh these chocolate chocolate chip cookies are incredible! I've been trying to stay away from sweets but I couldn't resist these cookies... Okay, I love freshly baked cookies but these were actually better the next day. Is it weird? The texture got a lot softer the next day. I thought that was a little strange but I enjoyed them a lot! I've been trying to eat healthier lately so I felt a little guilty about eating these but I figured you've gotta satisfy your cravings before you go and eat a gallon of icecream all by yourself. :) That is my excuse. Ahh... now I'm craving these cookies again! Uh oh! :)

Chocolate Chocolate Chip Cookies

Adapted from Food Network

Ingredients:
  • 2 1/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 sticks butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs, beaten
  • 1 tablespoon vanilla
  • 1/2 cup unsweetened cocoa
  • 2 cups chocolate chips
Directions:

Preheat oven to 375 degrees. In a bowl stir together flour, salt, and baking soda. In another large bowl stir together butter, both sugars, eggs, vanilla and cocoa. Gradually stir flour mixture into butter mixture and mix until combined. Stir chocolate chips and walnuts, if using, and stir to distribute evenly.

For cookies: Drop dough by tablespoonfuls onto greased baking sheets and bake about 10 minutes. Cool on a baking rack.
