My husband and I finally went out on a date just the two of us about a week ago. That is a rare treat since we had our little boy. My husband's sister watched our boy that night so as a Thank-you, I baked these delicious cookies for them. I found this recipe at "Sisters' Cafe" and the cookies were soft and really tasty. I used butter and shortening and that was my first time using shortening in cookies. I thought the shortening brought out uniquely delicious flavor... But you may replace shortening with all butter. I had a couple, I couldn't resist. My 7-year-old nephew told me how much he loved these cookies so I was happy! :)

They look delicious! The last time I baked CC cookies I used really soft butter. They spread horribly and were flat as a pancake. I will never use butter that soft again! I should have taken the time to refrigerate the dough as it says in the recipe you used. I have since grated cold butter and it works well. The addition of shortening is great also.

I saw that recipe there too and tried it since I love soft cookies. Yours look softer than mine though. They were yummy!

ReplyDeleteWell done managing to get out! Nights out are never the same when you have kids are they. My husband and I spent our first night post-kid huddled in the corner of a party complaining to each other that we were tired and just wanted to go to bed before we got woken up at midnight to feed our 3 month old. Happily these days we manage to stay the distance a bit longer!

Those cookies look terrific, Sook. Usually I'm leery of shortening in cookies, even when combined with butter, but it certainly does make for a tender cookie. I'm adding thesr to my 'must try' choco chip' recipe file :) Also, glad you enjoyed your date night with hubby! Hard to come by when you have a kid..from what I hear lol
