Are you on a diet? I am. In the beginning of last year, I decided that I needed to lose all the baby weight. And I did. But I am still about 20 lbs overweight. I have been exercising regularly for about a year and a half now and I thought I was eating pretty healthy but I'm having a hard time losing weight after I lost about 20 lbs last year. So now I'm counting calories. I'm allowed about 1400 calories per day. Counting calories isn't so hard. I have a calorie counting software, called "CalorieKing" and it's been fun tracking what I eat during the day. I'm more aware of what I eat and how much I eat. I drink a lot more water. And I exercise regularly. I couldn't run 5 minutes before but now I can run up to 30 minutes straight. That is an accomplishment for me. :) The reason why I am writing this is so that I can keep myself motivated to continue on with my weight loss journey. I am replacing white flour with whole wheat. I am eating two snacks in between meals so my metabolism is up. I have already lost 3 lbs in the last three days by counting calories and exercising at the gym. When I go to a restaurat, I ask for calorie charts (most restaurants have them) and skip the bread and salad dressing. It is a great change for me. And for my husband, too. He's lost about 50 lbs last year and he's still losing a lot. I'm so proud of him.
Okay, so you'll be seeing some lower calorie recipes on this blog for a while. But don't expect to see no fat recipes because that's not going to happen in my family. You need good fat to keep yourself energized. :)
This tuna sandwich is great for lunch. It's got about 240 calories per serving. It's also very tasty. I used a ceasar salad dressing, not mayo. Ceasar salad dressing probably has more calories than low-fat mayo or maybe even real mayo, but it tastes delicious, too. I recently fell in love with SandwichThins and they are great for any kind of sandwiches.
My Favorite Tuna Sandwich
Ingredients:
Makes two sandwiches
1 can tuna in water
2 sweet pickles, chopped
1/2 celery stalk, chopped
1 tablespoon garlic Ceasar salad dressing
salt and black pepper to taste
Sandwich Thins
Directions:
In a bowl, combine the tuna, sweet pickles, celery, Ceasar salad dressing, salt and pepper. Spread 1/2 of the tuna mix on a Sandwich thin and enjoy!
I bet the Caesar dressing really brightens it up.
