Chicken Satay with Peanut Sauce

My favorite thing about this dish is the peanut sauce. The unique flavor of peanut butter combined with coconut milk is just phenomenal. You could eat these sweet by sprinkling a little bit of brown sugar on the chicken or spicy like I did by sprinkling a tiny bit of crushed red pepper. The choice is yours.

Chicken Satay with Peanut Sauce

Ingredients:

2 large chicken breasts, thawed
4 cloves garlic
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon salt
1 tablespoon soy sauce
1 tablespoon olive oil
1 tablespoon water
1/2 teaspoon crushed red pepper
1 tablespoon brown sugar (optional)

Peanut Sauce:
1/2 cup crunchy or creamy peanut butter
1 cup coconut milk
1/2 cup water
1-2 tablespoons sweet chilli sauce
1 tablespoon soy sauce
2 teaspoons lemon juice

Directions:

Soak 10-15 wooden skewers in cold water for 10-15 minutes. Cut the chicken into flattish thick strips about 2 1/2-inches long and 1-inch wide. Thread 1 strip of chicken onto each skewer, glattening it on the skewer.

Process the garlic, coriander, cumin, salt, soy sauce, and crushed red pepper in a food processor, in short bursts, until smooth, adding alittle oil and water to assist the processing. Spread the mixture over the chicken, cover and refrigerate for 30 minutes.

To make peanut sauce: Stir all the ingredients in a pan, over low heat, until the mixture boils. Remove from the heat. The sauce will thicken on standing.

Heat a char-grill or barbeque until very hot. Cook the chickn for 2-3 minutes on each side. (If you want a sweetr satay, sprinkle with 1 tablespoon of brown sugar on the chicken.)

Serve topped with Peanut Sauce. If you want it to be extra spicy, sprinkle a little bit of crushed red pepper on top.

  29. hmmm...yummy satays...easily available here with their awesome spicy peanut sauce and side condiments of cucumber chunks, onions and rice cake like noobcook said. There are choices of beef, chicken, seashells, even pig intestines!
