Baked Salmon with Garlic and Basil
(Makes about 4 servings)Ingredients:
1 fillet Atlantic salmon, skinned and cut into 4-6 pieces
1-2 tablespoons olive oil
4 garlic cloves, finely chopped
1/3 cup fresh basil leaves, chopped
garlic salt (use Santa Maria seasoning if you have it), to taste
freshly ground black pepper, to taste
Directions:
Preheat oven to 375 degrees F.
Spray a baking sheet with a cooking spray. Place the salmon pieces on the baking sheet. Drizzle the oil and sprinkle the salt and pepper over the salmon pieces. Gently rub the salmon pieces with your hand to coat them evenly with the oil and the seasonings. Sprinkle the chopped garlic and basil leaves on the salmon pieces and bake for about 12-15 minutes, or until the salmon is cooked all the way throuh.

yup, costco is great when it comes to buying fish, meat, and produce! i love incorporating more salmon into my diet - not only does it taste good, but it's good for you!
