Indian Style Rice w/ Chickpea

Ingredients:
1 tablespoon olive oil
1/2 onion, chopped (optional)
2 teaspoons coriander seeds
2 teaspoons cumin seeds
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon chili powder
2 teaspoons curry powder
1 can chickpeas, drained
1 cup frozen peas
1 1/2 cups Basmatic or Jasmine rice
3 cups water
salt and pepper to taste
Directions:
In a large pot (I use a non-stick pot), heat oil over medium-high heat and add the onions and stir until they are softened. Add coriander and cumin seeds and stir until the seeds have blackened, about 3 minutes. Add the remaining seasonsing, ground coriander and cumin, chili powder, and curry powder and stir until all the seasonings are mixed well, about 1-2 minutes. Add the chickpeas and frozen peas and stir to coat them in the seasonings.
Add the rice into the seasoning and onion mixture and stir well to coat the rice with the seasonings, about 2 minutes. Pour the water into the pot and reduce the heat to medium. Let the rice cook, about 10-15 minutes. Stir the rice before serving.

ReplyDeleteOh YUM! This kind of looks like an Indian fried rice ... I love it! Both chick peas and peas are sooo good with any kind of rice and I love the spices used in this dish as well. I wish I could have some for lunch.

ReplyDeleteI've never tried chickpeas, mostly because I once saw someone open a can and they were all rotten inside. Now I don't think I can eat them! Maybe I'll try this without them, though. Looks yummy!
