Catfish Taco
Ingredients:
1 tablespoon olive oil
3 catfish fillet
2-3 teaspoons taco seasoning
1/2 teaspoon garlic powder or garlic seasoning
Salt and pepper to taste
Tortillas
Mexican cheese
Fresh chunky salsa:
1 tomato, seeded and diced
1 garlic clove, chopped
1/4 cup fresh cilantro, chopped
1 teaspoon lemon or lime juice
1/8 teaspoon salt
Directions:
In a large skillet, heat oil over medium high heat. Add the catfish and cook until the fish is easily breakable, about 5 minutes. Break the fish into small or big chunks with a spatula and add the taco seasoning, garlic powder, salt and pepper and stir well. Remove from heat when the fish is well seasoned and cooked through.
Make salsa by combining all salsa ingredients in a medium bowl and mix well.
Place a good portion of the fish on a tortilla, then salsa, and a little bit of cheese on top. Grill the tortilla (optional) and serve.
I love fish tacos! So creative with the catfish. I've not seen them made with that before. Catfish is big in Indiana where I'm from.

ReplyDeleteYou're totally right, catfish is perfect for fish tacos! A strong enough flavor that it won't get lost in the other ingredients. Plus, it's environmentally friendly I believe. Yay!

Fish is incredibly expensive but I just love it as well, so I just put up with the prices and look for the sales! This is an excellent recipe from the norm.

ReplyDeleteI remember hearing about fish tacos many years ago and never appealed to me. But I made them last year and OMG, they are delicious! Can only imagine how good they would be with Catfish, which is one of my favorites!
