Cheesy Baked Red Potatoes


These little red potatoes make such a great side dish! I tried these just a couple nights ago and they were tasty and pretty healthy, too! I didn't add any butter or any sour cream but they still tasted wonderful! The potato skin was perfectly crispy and the melted cheese went great with the well seasoned red potatoes. It's incredibly easy to fix this, too. Just slice the potatoes about 3/4 of the way into the potatoes, microwave some potatoes, and season with paprika, salt, and black pepper and bake in the oven. See? Simple and delicious!



Cheesy Baked Red Potatoes

Ingredients (per potato):

1 red potato
1 teaspoon olive oil
1/2 teaspoon paprika
pinch of salt and black pepper
(optional) pinch of garlic salt
1 tablespoon cheddar or mexican blend cheese
1 teaspoon chopped fresh cilantro

Direction:

Preheat oven to 450 degrees. 

Slice the potatoes carefully about 3/4th of the way (For me, using a sharp steak knife worked best!). Place the potatoes on a plate and cover with a plastic wrap and microwave on high for about 8 minutes or until the potatoes have softened.

Drizzle olive oil over each potatoes. Season each potatoes with paprika, black pepper, salt, and garlic salt. Sprinkle cheese on top of each potatoes.

Place the potatoes on a baking sheet and bake for about 20-23 minutes or until the potato skins are crispy. Sprinkle chopped cilantro leaves over the baked potatoes.

  12. Love your take on the hasselbacks! I've always played it pretty safe with s/p, garlic and thyme but cheese is always a fine addition!

    I used small red potatoes, too. They worked great! Besides, that way, we don't have to eat a big potato and feel guilty about it. :) Thanks for your comment.
