Fabulous California Roll (Sushi)


Mmmmm... yummy sushi rolls!! This isn't exactly the original California style roll, since I added a few other ingredients but they are delicious!! Did I mention that my husband lived in Japan for two years where he got to try all the great Japanese food, including super expensive and authentic sushi! He said that a lot of sushi we find here in America aren't actually found in Japan. Funny! There is no California rolls in Japan, he says, I mean, they don't even have avocados there. But we both LOVE California rolls. They're really easy to make, so don't be afraid, just try!

California Rolls (Sushi)

Ingredients: (Makes about 8-10 rolls)

10 squares of dry seaweed

Rice seasoning:
2 cups uncooked rice (short grain only) - Cooked in rice cooker or on stove - follow package instruction
4-5 tablespoons seasoned rice vinegar (or to your liking)

1 package imitation crab - preferrably long strips, cut each strip in half (long way)
1 carrot, sliced in long, thin strips (as shown in the picture below)
2 avocados, sliced
(Optional) Cream cheese, sesame seeds


Direction:

Mix vinegar into cooked rice well. Let rice cool.

In a small sauce pan, bring 1 1/2 cups of water to boil, add 2 tablespoons of soysauce and 2 tablespoons of sugar, then thinly sliced carrots. Let it boil about 2 minutes (Make sure they are not soggy. Do not overcook them). Drain water and set aside.

On dry seaweed, spread rice thinly, add imitation crab, carrots, avocado, and cream cheese as shown in the picture below.

Using a sushi roller, roll the seaweed as shown in the picture below. Roll from one end to the other, squeezing as you go to keep the roll tight. (Tip: Put a little of water on the seaweed where it wasn't covered with rice to help the roll close tight.)

That's it! My husband and I loved the cream cheese in the rolls. It was a great taste booster! Serve with wasabi and soy sauce, if desired.
