Chicken Parmesan

Ingredients:
4 chicken tender breasts (You must pound the chicken until it is about 1/4" thick. Cut chicken into 8 small pieces.)
1/2 cup vegetable oil or olive oil (Whatever you prefer)

*Breading
1 cup flour
1 cup Panko (bread crumb)
2 eggs
1/4 cup craft 100% grated parmesan cheese
A pinch of salt, pepper, and garlic powder
*Sauce
3 tablespoons of tomato paste
1 can of tomato sauce (about 14 oz)
1/2 cup fresh parmasan cheese (You may add more if the sauce tastes too tomato-y.)
1/4 craft 100% grated parmasan cheese
1 1/2 tablespoon italian seasoning
1 teaspoon Santa Maria seasoning
1 teaspoon red chili flakes
1 tablespoon garlic (minced)

*Sauce

Direction:
1. Rince chicken thoroughly and set it aside.
2. Make breading
-In a bowl, mix panko, parmasan cheese, salt, pepper, and garlic powder.
-Flour chicken, then coat them in eggs, and in the panko mixture.
3. Pour vegetable oil in a large pan, and fry the chicken until they are cooked all the way and golden brown.
4. Place the cooked chicken on a piece of paper towel to remove grease.
5. Make sauce
-In a sauce pan, add tomato paste and tomato sauce to simmer.
-When the sauce begins to simmer, add parmesan cheeses, Italian seasoning, Santa Maria seasoning, and garlic.
6. Preheat oven to 400 degrees. In a baking pan, place the chicken on the bottom. Pour the sauce over the chicken (* Try not to put too much sauce on top. The taste of the sauce may be overpowering.) Sprinkle parmasan cheese (or Mozzarella cheese, if you desire) on top to melt. Bake for about 5 minutes until the cheese is melted.
